The gluten protein is everywhere in the foods you enjoy: Pizza, cookies, bread, cereals, and foods containing grains ike rye, wheat and barley.

When gluten is consumed, an immune reaction is triggered in the small intestines. The inner surface of the small intestine is damaged and certain nutrients are no longer able to be absorbed.

Overall colon health can also be affected. Diarrhea and abdominal pain are two gluten allergy symptoms. Other signs you have this allergy include malnutrition, fatigue and vomiting. When this is the case, your doctor may recommend a gluten free diet.

So, the definition of "what is gluten free"? The term describes both a diet plan and a way to live: avoiding gluten-based foods that contain grains including wheat, graham flour, barley, farina, spelt, semolina, durum, triticale, bulgur and rye. The gluten contained in many other foods is not a obvious, and may be masked as an ingredient. Be sure to check food labels to ensure that no gluten in any form is contained.

In addition, look to see if the foods you are eating were processed in a facility which makes products containing these grains. Foods that fall into this category include beers, cereals, salad dressing and soups.

What are the foods to look for when following a gluten-free regimen? Here are some examples: fruits, vegetables, rice, potatoes, most dairy products, cornmeal and pure corn tortillas, buckwheat, arrowroot and tapioca. Also, include lots of fresh fish, meat and poultry -- though beware that breading, marinating and batter-coating is a big no-no in gluten-free diets.

With a gluten allergy, gluten-containing foods you eat have a negative impact on the small intestine. There, lining the inner wall, are many minuscule hair-like projections known as villi. These structures function to help the body absorb certain important minerals, vitamins and nutrients from our food source.

When you eat gluten and are allergic to it, the villi are damaged and the body is no longer able to properly absorb the necessary nutrients.

Don't take any chances if you believe you might be suffering the effects of a gluten allergy. A doctor and some medical tests are required to confirm the diagnosis and prescribe the proper course of gluten-free treatment. Once that is accomplished, and you eradicate gluten from your diet, your health will improve dramatically.
